Herb and Tomato Focaccia Bread


This is a delicious bread recipe that I make for special occasions.  It's always gone within one day, because we just can't stay away from it.  The cheesy and garlic-and-herbiness of this bread is to die for!

1 pkg active dry yeast
1 C warm water (110-115 degrees)
2 Tbsp olive oil, divided
1 1/2 tsp salt
1 tsp sugar
1 tsp garlic powder
1 tsp oregano
1 tsp thyme
1 tsp rosemary (crushed)
1/2 tsp basil
dash pepper
2 1/2 C flour
2 tomatoes, sliced thinly
1/4 C mozzarella cheese, shredded
1 Tbsp parmesan cheese

In a large bowl, dissolve the yeast in warm water.  Add sugar and allow to sit for 10 minutes to proof.  Add 1 Tbsp oil, salt, garlic powder, herbs, pepper and flour.  Dough should be soft and slightly sticky.  Add flour in small increments if needed.

Knead dough for 6-8 minutes.  Place in a greased bowl, turning once to grease the top.  Cover and let rise until doubled, about 1 hour.

Punch dough down.  Cover and let rest for 10 minutes.  Shape into a 9x13 rectangle and place on a greased baking sheet.  Let rise about 30 minutes.

Make small dimples with your finger in the top of the dough.  Brush with remaining olive oil.  Arrange tomatoes on top.  Sprinkle with cheeses.  Bake at 400 degrees for 20-25 minutes until cheese is slightly browning.
