Very Berry Greek Yogurt Pancakes


I have recently discovered the joy of substituting Greek Yogurt for sour cream.  It tastes quite similar and we've been using it in all kinds of Mexican dishes.  I tried it out with this Sour Cream Pancake recipe and was quite pleased with the results.  I'm always happy to find a healthier alternative to the foods we regularly eat.

2 C flour
1/4 C sugar
4 tsp baking powder
1/2 tsp salt
2 eggs
1 1/2 C milk
1 C plain greek yogurt
1/3 C melted butter
1 C frozen (or fresh) blueberries and strawberries

Combine the dry ingredients and wet ingredients separately.  Stir together and add fruit.

Pour by 1/4 C increments onto a greased griddle over medium heat.

Wait until the bubbles on top of the pancake are slightly firm and the edges of the pancake appear to be firm.  Flip and allow to cook for about 20-30 more seconds.

Serve warm with butter/syrup
