Crowd-Pleasing White Chocolate Snickerdoodles
I made these for a church event we had over the weekend. My dear husband came home and told me that they were an absolute hit! (Which didn't really surprise me, since I had sampled them before sending them off). They quickly disappeared, and I have it on good authority that at least one church-member created his own secret stash of them for later.

1 C unsalted butter, at room temp.
3/4 C brown sugar
1/4 C sugar
3.4 oz package vanilla pudding
2 lg. eggs
1 tsp vanilla
2 1/4 C flour
1 tsp baking soda
1/2 tsp salt
2 C white chocolate chips
1 tsp cinnamon
1/3 c. cinnamon and sugar mixture
Preheat oven to 350. Prepare baking sheets lined with parchment paper (or use a baking stone).
In a large bowl, cream the butter and sugars. Add eggs and mix together, then add remaining ingredients (except cinnamon and sugar mixture). Mix well.
Scoop out with a spoon in about 3 Tbsp sized balls. Roll the ball in the cinnamon-sugar mixture.
Place on baking sheet about 2 inches apart. Bake for 8-9 minutes, until JUST slightly golden on edges. The should still be a little soft, but will set up. Let cool on the baking sheet.
