Baked Creamy Chicken Taquitos
This is a recipe from Our Best Bites, which is one of my favorite cooking blogs I follow. It's also listed on my Favorite Recipes page as one of my personal 5 favorite dinner recipes. It's delicious and always gets compliments. It's also a recipe that is a great one for making extra and freezing for future dinners.

1/3 C softened cream cheese
1/4 C green salsa
1 Tbsp lime juice
1/2 tsp cumin
1 tsp chili powder
1/2 tsp onion powder
1/4 tsp garlic powder
3 Tbsp chopped cilantro
2 Tbsp chopped green onions
2 C cooked, shredded chicken
1 C shredded pepperjack cheese (or mexican cheese mix)
small flour tortillas (about 15)
Cooking spray
Kosher Salt
Preheat the oven to 425 degrees. Grease a baking sheet with cooking spray.
Combine the cream cheese, salsa, lime juice, cumin, chili powder, onion powder, garlic and cilantro, green onions, chicken and cheese.
Place 2-3 Tbsp filling on lower 1/3 of each tortilla and roll up. Place on baking sheet.
Spray tortillas with cooking spray and sprinkle kosher salt on top. Bake 8-10 minutes until edges are just golden. May serve with sour cream, salsa or guacamole.
