Chicken Casear Nacho Salad


This Nacho Salad recipe is a new favorite! It was DELICIOUS.  I love the baked tortilla "chips", and the spicy shredded chicken on top of Caesar dressing.  The salad complements it perfectly.  Yum!

2 lg. chicken breasts
Lemon pepper seasoning
3 Burrito-sized flour tortillas
Caesar salad dressing
1 1/2 C shredded mozzarella cheese
4 C romaine lettuce, shredded
grape tomatoes, chopped


Preheat oven to 400 degrees.

Cook chicken, seasoned with lemon pepper, in a skillet over med heat until no longer pink in the center

 Line a baking sheet with aluminum foil and spray with cooking spray.  Cut tortillas into 8 wedges each and place on baking sheet.  Spray tortillas with cooking spray and bake until slightly golden-brown.  (3-4 minutes).

Spread 1/2 tsp Caesar dressing on each wedge.  Top with 1 Tbsp shredded chicken and mozzarella cheese, then bake for 3-4 minutes until cheese is melted.

Toss romaine lettuce with Caesar dressing and place in the middle of a plate.  Top with tomatoes and surround with baked Chicken Caesar Nachos.
