Cajun Chicken Nuggets
Cajun chicken nuggets are one of my girl's favorite dinners. And not just because we usually have fries with them, although I'm sure that helps. I could eat them at least once a week, because they are just so darn tasty! The chili powder gives them just the right amount of kick and the panko crumbs give them just the right amount of crunch. MMM!
Recipe: (Printable Recipe Front and Back)
1 C Italian Panko Crumbs
2 lg eggs
4 tsp chili powder
1/2 tsp garlic powder
salt
pepper
1 lb boneless skinless chicken breast
1/4 C vegetable oil
Combine panko crumbs, chili powder, garlic powder, salt and pepper (to taste) in a medium sized bowl.
Cut chicken into medium sized pieces
Heat oil in a large skillet over medium heat. While oil is heating, whip eggs in a medium sized bowl.
Dip chicken pieces in:
1. Seasoning bowl
2. Eggs
3. Seasoning bowl
Fry the chicken on the skillet. The chili powder makes these chicken nuggets a darker shade than your average chicken nugget, so I usually cook them until I think they are done (maybe 8 minutes for the first group, fewer for the following) and then take out the largest piece and cut through the middle to check.
Remove chicken from skillet and place on a plate covered with a paper towel to help drain excess oil.
