Tacoritos
This dish is a favorite of my husband's and my preschoolers. It has a mixture of beef and sausage, and a good portion of chili powder to give it a little punch. Add to that a generous helping of cheese, and you just can't go wrong.

1/4 C butter, melted
1/4 C flour
4 C water
3 Tbsp chili powder
1 tsp garlic salt
1 lb ground beef
1 lb pork sausage
1/4 C chopped onion
1 C refried beans
8 flour tortillas
2 C shredded mexican blend cheese
In a large sauce pan, melt butter. Stir in flour until smooth. Gradually add water and allow to boil. Stir in chili powder and garlic salt. Simmer uncovered for 10-15 minutes, whisking periodically.
In a large skillet over medium heat, cook the ground beef, sausage, and onions. Drain grease. Stir in refried beans until warmed.
Spread 1/4 C sauce in a greased 9x13 baking pan. Spread around 1-2 Tbsp sauce in each tortilla, top with 2/3 C meat mixture down the center of each. Top with 1/4 C cheese. Roll up tortilla. Place seam side down in baking pan. Once all tortillas are rolled, top with remaining sauce and cheese.
Bake uncovered at 350 for 18-20 minutes.
