Grilled Chicken Ranch Pasta
I love love love the creaminess of this pasta- I'm always one to love a good alfredo sauce. But what I love most about this recipe is the spicy kick of the grilled ranch chicken. Who would have thought to put ranch in a pasta dish? But it's delicious! Make sure you leave plenty of time for the chicken to marinate. This is a two step dinner, but each step is nice and simple.
Recipe:
Chicken Marinade:
1/2 C olive oil
1/2 C ranch dressing
3 Tbsp worchestershire sauce
2 Tbsp cajun seasoning
2 tsp salt
1 tsp lemon juice
1 tsp white vinegar
1/4 tsp pepper
1 Tbsp sugar
4-6 boneless skinless chicken breast halves
Combine all marinade ingredients and place chicken in the marinade. Refrigerate for at least 4 hours.
Sauce:
16 oz bowtie pasta
2 1/2 C heavy whipping cream
3 cloves crushed garlic
1 Tbsp pepper
2 tsp cajun seasoning
1/4 C butter
1/2 C shredded parmesean
Grill the chicken over med-high heat 8-12 minutes.
In sauce pan, melt butter. Add garlic, whipped cream, cajun seasoning, pepper, parmesean. Whisk together over med-low heat for about 10 minutes. (It will remain fairly thin). Pour over pasta and chicken.
