Best Dinner Rolls


After years of searching for a good roll recipe, I have finally found one that the whole family loves! It comes from ourbestbites.com. These rolls are easy to make, and are nice and fluffy on the inside.  They are especially yummy straight out of the oven.

2 C whole milk (or 2%, but nothing less)
1/2 C + 1 Tbsp sugar, divided
5 1/3 Tbsp butter
2 tsp Kosher salt
2 packages active dry yeast (4 1/2 tsp)
2/3 C warm water
8 C flour
3 eggs

Combine milk, 1/2 C sugar, butter and salt in a saucepan.  Allow butter to melt.  Remove from heat.

Combine yeast, 1 Tbsp sugar and water and stir until yeast dissolves.  Allow to sit 10 minutes, making sure that your yeast gets bubbly (see Quick and Easy Yeast Prep)

In a large mixing bowl, combine the milk with 3 C. flour.  Beat on lowest setting for 30 seconds.  Add yeast and beat on high for 3 minutes (don't cheat on this one.  This will take the place of kneading later).  Add remaining flour and stir until combined well.  Dough should be moderately sticky.

Cover dough with a clean towel and allow to rise for 1-2 hours.  (I like to cover it first with saran wrap sprayed with cooking spray, just to keep the dough from sticking to my towel).

Punch down dough and separate into two balls.

Roll each ball out into a rectangle and cut into 12 pieces (each) with a pizza cutter.

Form each roll into a ball and place in a greased baking pan.  Allow to rise for 30 minutes.  (This is a good time to preheat your oven).

Bake at 375 for 15-18 minutes.

After removing the rolls from the oven, rub the top of each roll with a cold stick of butter.
