Chicken Salad Croissants


In the past I have not been a very big fan of chicken salad, but I was introduced to a version I loved at a baby shower a few years ago.  Since then I've tried to find a similar recipe, and this is pretty close.  My favorite way to eat chicken salad is on a croissant, but you can get creative and serve it up any way you like!

3 oz cream cheese, softened
1/3 C plain yogurt
1 celery stalk, finely chopped
1 Tbsp dijon mustard
2/3 Tbsp basil
1/2 tsp salt
1 tsp lemon juice
2 chicken breasts cubed, boiled in chicken boullion and chicken seasoning (or cooked any way you     like.  Rotisserie chicken would be FABULOUS).
Dash onion powder
Croissants

Combine cream cheese, yogurt, mustard, basil, salt, lemon juice and onion powder.

Add celery and chicken.  Mix well, and place in an airtight container in the refridgerater until chilled.

Best served cold.
