Fabulous Tenderizing Marinade


This is one of my favorite steak marinades.  The big secret is the use of kiwi juice to tenderize the meat.  I plan ahead to make sure it has plenty of time to marinate (aim for 8 hours in the refrigerator).

1/2 C brown sugar
1 clove garlic
1 T chopped ginger
1 T white wine vinegar
2 T worchestershire sauce
1/2 C soy sauce
1 kiwi
Flank steak

Combine all ingredients except for the kiwi.

Rub kiwi vigorously along countertop.  Cut kiwi in 1/2, then rub inside of kiwi along flank steak.

Place steak in marinade.  Marinade 8 hours in refrigerator.  Grill over medium heat.
