Tator Tot Casserole
This is a recipe I brought from my mom, and was frequently my chosen birthday dinner. Now my daughters love it as well. It's so simple to make that it's become a staple in our home. And it's an easy recipe to create variations on by simply adding a few different ingredients or switching up the cheese for a new variety.

1 lb ground beef
1 can cream of *celery or mushroom soup (if we get inventive with the recipe, we usually opt for mushroom. Celery if we're doing it the normal way).
1 C milk
1 small bag tator tots
1 small onion
2 C shredded mozzerella cheese
Grease a 9x13 baking dish. Cook tator tots for about 1/3 - 1/2 the recommended time.
In a skillet, brown the beef with the onion. Drain the grease.
In a large bowl, combine milk and cream of * soup.
Top tator tots with ground beef and sauce. Sprinkle with mozzerella cheese.
Bake at 350 for 20 minutes.
Variations we've tried:
For a spicier casserole, add about 1 1/2 tsp of chili powder, and use pepperjack instead of mozzerella cheese.
Add 1 can of rinsed, drained black beans to the meat mixture.
