Cowboy Casserole
I found this recipe on pinterest and was interested in the name (John Wayne Casserole). In reading through comments regarding the casserole, I was interested to learn about the original John Wayne Casserole, which was submitted by John Wayne to a recipe book for charity, and apparently is nothing like this quite delicious dish. So I have re-named it "Cowboy Casserole", which I believe suits the fact that it is a nice hearty casserole, with plenty of vegetables, dairy, meat and carbs to keep those cowboys full of energy for a hard day's work.

2 lbs ground beef
1 packet taco seasoning
1/2 C sour cream
1/4 C mayo
1 C cheddar cheese (shredded)
1 sliced yellow onion
2 1/2 C biscuit mix (I used bisquick)
2 sliced med. tomatoes
1 green bell pepper, sliced
1 (4 oz) can sliced jalapenos
Preheat oven to 325 degrees
Brown ground beef with taco seasoning (according to directions on seasoning packet)
In a medium sized bowl, combine sour cream, mayo, 1/2 C cheddar cheese, 1/2 of the onion slices.
In a separate bowl, combine biscuit mix and water according to biscuit directions (so for the bisquick I used the same amount of liquid called for on the box, substituting water for milk). Pat the dough onto the bottom and up the sides about 1/2 inch of a greased 9x13 baking dish.
On top of biscuit mix, layer the following ingredients in this order:
ground beef
tomatoes
green pepper
onions
jalapenos
sour cream mixture
top with remaining 1/2 C cheddar cheese.
Bake for 30-40 minutes until edges are slightly browned.
