Smokey BBQ Roast
This recipe was originally created to be used with a beef brisket, but I prefer beef roasts. So take your pick of either one. I'm picky when it comes to roasts, and love the flavor of this recipe. It has just enough kick and keeps the roast perfectly moist.
Recipe:
4 lb beef roast (or brisket)
16 oz baby carrots
2 stalks of celery, sliced
1 1/2 C smoke-flavored BBQ sauce
2 Tbsp Dijon mustard
1 Tbsp Worcestershire sauce
Place roast in slow cooker. Top with carrots and celery.
Mix together BBQ sauce, mustard and Worcestershire. Pour over roast
Cook on low for 8-9 hours. (About 1 hour from finish, take two forks and shred into large pieces)
