Russian Chicken



One of my best friends made this dish for my daughter and me when we were visiting her a couple of years ago.  Ever since then it's been a staple in our home.  The hubby and I love it, and even our preschooler who is very suspicious of anything including chicken gets excited about this dinner with the "candy sauce".

Recipe:

4-5 Large boneless skinless chicken breasts (in this recipe they are frozen.  If yours are thawed, just cut down the cooking time and keep an eye on the chicken).

8 oz apricot jam
8 oz russian salad dressing
1 package of onion soup mix

Combine the jam, dressing, and onion soup mix.  Pour over the chicken in a coated casserole dish.
Bake at 350 for about 40 minutes.

Serve over rice.
