Beef Stroganoff


While beef stroganoff is an easy recipe that I typically save for the end of the month when we're about to the end of our food budget, I am always surprised by how much my family enjoys this dish.  It disappears quickly both from our plates and from the refrigerator.

1 lb ground beef
1 Tbsp butter
1 chopped onion
1 clove minced garlic
1 can cream of mushroom soup
1/2 C water
1 C sour cream
1 Tbsp ground mustard
salt
pepper
noodles (I like to use elbow noodles).  About 1/3 of a box, cooked


Cook noodles according to directions.

Saute onion and garlic in butter.  Then add ground beef and cook over medium heat.  Drain excess grease.

Add soup, water, mustard, salt and pepper to taste.  Remove from heat and stir in sour cream.

Combine with cooked noodles.  Make sure not to overwhelm this dish with noodles.  You want a good meat and sauce to noodle ratio.

Best served warm.
