Soft and Sweet Sugar Cookies

 
The trick to these deliciously soft sugar cookies is to take them out of the oven exactly when the recipe calls for it.  The cookies will still look soft, but will set in a few minutes.  (Make sure your oven is properly pre-heated first).
 Recipe:

1 c butter, softened
1 1/2 c confectioners sugar
1 egg
1 1/2 tsp vanilla
2 1/2 c self-rising flour (see note)
Frosting
In a large bowl, cream the butter and confectioners sugar until light and fluffy.  Beat in egg and vanilla.  Gradually add flour.  Mix until soft dough forms.

On a lightly floured surface, roll out dough to 1/4 inch thickness.  Cut with floured cookie cutters.  Place 2 inches apart on a baking sheet.

Bake at 375 degrees for 5-7 minutes.  Cookies may still look slightly doughy, but will continue to set as they cool.  Let cool on cookie sheet for 5 minutes before removing to wire rack to cool completely.  Frost once cookies are completely cool.  Makes 2 dozen.
