Meatball Subs
This is one of my husband's favorite dinners of all time. And my favorite things are that it's really quite simple to make, and the meatball recipe lends itself to plenty of leftovers. We usually end up eating meatball subs, and then later in the week we have spaghetti and meatballs with whatever didn't become a mid-week snack.
Recipe:
Meatballs:
1 lb ground beef
1 lb italian sausage
1/4 C minced onions
1/2 C bread crumbs
3/4 C water
1 tsp salt
1/2 tsp pepper
2 tsp oregano
1 1/2 tsp garlic
2 tsp parsley flakes
1 egg
1/4 C Parmesan cheese
1/2 tsp caraway seeds
2 tsp basil
Combine all ingredients. Shape into golf-ball sized balls and place on an ungreased cooking sheet. (I like to line that cooking sheet with parchment paper, just to keep clean-up a little easier). Bake at 350 for about 15 minutes.
Subs:
Hoagie Rolls
Mozzarella cheese (block)
Spaghetti sauce
Open the hoagie rolls and place on a cooking sheet. On the bottom side of the hoagies, place 3 meatballs side by side. Drizzle some spaghetti sauce over the meatballs, and then top with sliced mozzarella cheese. Bake at 350 for 5 minutes and serve warm.
