Greek Pastitsio (Casserole Style)
I found this recipe on Pinterest, and thought it looked yummy. I'm always looking for something a little different to feed my family, and we don't eat a lot of Greek food. I have to admit the nutmeg in this recipe made me nervous, but the entire family agreed it was delicious!
Recipe:
12 oz penne pasta
1 lb ground turkey
1 1/2 C chopped onions
5 garlic cloves, minced
3/4 tsp salt
2 Tbsp flour
8 oz lite cream cheese (this is a recipe where you can get away with lite)
2 C milk
1/8 tsp nutmeg
14.5 oz diced tomatoes, drained
1 C mozzerella, shredded
2 Tbsp chopped parsley
Cook the pasta and preheat the broiler
Heat a large skillet over medium heat. Add the turkey and diced onions, 1 tsp salt, 1tsp pepper. Cook and crumble the meat, then drain the excess grease.
Add garlic. Sprinkle flour over the meat and cook 1-2 minutes. Add cream cheese in pieces and stir until melted. Whisk in milk, nutmeg and tomatoes. Cook 5-6 minutes, stirring frequently, until slightly thickened. Combine with pasta.
Pour casserole into a greased 9x13 baking dish. Sprinkle mozzerella on top. Broil 3-5 minutes and add parsley as a garnish.
