Spicy Italian Sausage Spaghetti
I made this for dinner last week, and it was wonderful! I was happily surprised to find that it made enough food for us to enjoy left overs the next few days. I love left over pasta! Don't you?
Recipe: (Printable Recipe Front and Back)
1 package hot Italian sausage (1 lb)
1 1/2 tsp salt
1 tsp Italian seasoning
1/4 tsp pepper
1 each red, yellow, and orange bell peppers, thinly sliced
4 cloves garlic, pressed
1/2 C chicken broth
28 oz can diced tomatoes, with juice
2 tsp parsley
2 tsp basil
spaghetti noodles (prepared)
Brown the sausage in about 2 Tbsp olive oil in a large skillet over medium heat. Crumble the sausage as you cook it. Remove the sausage into a bowl, making sure to leave most of the drippings in the skillet.
Add the peppers to the skillet. Toss in the salt, pepper and Italian seasoning. Saute for about 2 minutes.
Add the garlic and saute for about 2 minutes.
Add the chicken broth and allow to simmer for about 3 minutes.
Add in diced tomatoes and return the sausage to the skillet. Add the parsley and basil. Allow to simmer on low for 3-4 minutes.
Serve over cooked pasta.
