Chocolate Thumbprint Cookies
I originally baked these cookies for one of my husband's work events. I wanted to add a little visual variety to the regular chocolate chip cookie platter. I fell in love. This cookies are melt-in-your mouth delicious. I think they would be a fun Halloween cookie- just switch out the chocolate frosting for vanilla dyed orange.

2 1/2 C flour
1/2 tsp salt
1 C unsalted butter, at room temperature
1 C powdered sugar
2 tsp vanilla
Chocolate sprinkles
Chocolate frosting (and decorating bag)
Preheat oven to 350 degrees. Grease a baking sheet and set to the side.
In a medium bowl, whisk together flour and salt.
In a separate bowl, cream the butter, powdered sugar and vanilla until light and fluffy. Reduce speed to low and combine with flour and salt. Then beat until a dough forms.
Scoop out a tablespoon of dough, roll into a ball and use thumb or a melon baller to depress the middle of the dough. Roll sides in chocolate sprinkles. Place on cookie sheet.
Bake for 10 minutes. Remove from oven and make a deeper indentation in the middle of the cookies, and bake for an additional 8 minutes. Allow to cool.
Swirl frosting on top.
